The Perfect Valentine's Dinner

Château Briand ~ For Two ~Recipe

8 - 10 oz Beef Tenderloin (Filet Mignon)
1 Tbsp Butter
Salt & Pepper

Season beef and brown all sides on medium high heat. Finish in the oven at 400* for
approximately 8-10 minutes or until desired doneness.

Honey Cognac Sauce

1 Cup Cognac
1 Tbsp Honey
1/2 Cup Demi-Glace
3-4 Tbsp Butter
Salt & Pepper

In a sauce pan over medium to medium high heat reduce Cognac to "Au Sec".
Reduce heat to medium low and add remaining ingredients stirring constantly until
butter is incorporated into the sauce.
