The Perfect Valentine's Dinner
Warm Spinach & Lobster Salad with Sweet Dijon Dressing Recipe

2-3 Tbsp Dijon Mustard
2-3 Tbsp Brown Sugar
1/4 Cup White Wine Vinegar
1/3 Cup Orange Juice
1-1 1/2 Cups Neutral Oil
1 Tsp Shallots
Fresh Chives. Cracked Pepper & Salt to Taste
In a blender, combine all ingredients except oil. While blending slowly add oil until
emulsified. Add Fresh Chives, Cracked Pepper & Salt to Taste. Set aside.
3-4 Slices of Crisp Bacon
1/2 Red Onion Julliene
6-8 Oz Lobster Meat - Large Dice
1 Package Baby Spinach
1 Tbsp Unsalted Butter
In a saute' pan, melt butter and brown onions over medium high heat. Add lobster
meat, stir about 3 minutes until lobster is warm. Add dressing, simmer 1 minute. Toss
over Spinach, top with bacon.
