Brown Sugar-Mustard Glazed Salmon Recipe

4-5 lb Salmon Side
*(bones out & skin off)
1 1/2 cups Dijon Mustard
1/2 lb Brown Sugar
1 Lemon
Salt, Pepper & Fresh Herbs
1/2 cup White Wine
1/4 cup Neutral Oil


Preheat oven to 400*
Oil the pan, place the salmon, season and set aside. In a bowl, combine mustard, brown sugar,
juice from half the lemon, chopped fresh herbs and cracked pepper. Slowly add white wine until
desired consistency (should be very sticky). Spread glaze over the salmon evenly. Reserve some
to glaze again after baking. Ovens will vary. Bake at 400* for approx. 15 minutes or until
medium.
Garnish on a tray with croutons, olives, artichoke hearts, roasted peppers, etc.
